My apologies to the vegetarians here. Just curious, what kind of meat have you tried. The normal's (chicken, pork, beef, lamb, goat) don't count. I will start
Camel
Buffalo
Kangaroo
had a chance to try Alligator but just could not do it

You need to try Alligator, one of the best meats out there. I have had the tail and ribs. Not sure the ribs are that good though, not enough meat.

I had a samplers plate from a resturant in Jackson Hole. The buffalo prime rib was excellent, the elk steaks were as well, but the deer brats were flavorless. Had rabbit and squarrel also. They are really good if a person know how to fix them. Duck is not a favorite. Too much grease and tough. Eaten rattlesnake, there again if fixed right very good. Had quail and pheasant, not much meat there but tasty. Had bear, very good when fixed by someone who knows how to power boil three time, then bake or fry. Haven't had groundhog, or possum.

I will have to tried it (where do you get it?), I travel a lot and what some people throw away is actually good food example pigs feet, liver, fish heads, stewed tripe called mondongo (soup is awesome),

I really like liver, but not the restaurant style. Really over cooked. I like mine on the rare side. Blood still oozing out. That is beef or chicken. Never tried any other!

Liver is willy good when you season it and fried it Caribbean style.

I haven't seen beaver mentioned yet. The old 40 pounders are tough but the younger ones around 18 pounds are good eating. Muskrat is better than it smells when you skin one but I can hardly make it past the skinning. Coon is not too bad also. I can't talk myself into trying possum though. My friend wanted to try groundhog so I shot him one and took it to him. He said it wasn't too bad but I turned down the invite for supper.
